I created this recipe on the night before my weekly farmers market shop. The only vegetable I had in the house was zucchini. I had just picked up my raw dairy products a couple of days prior and got some free range organic bacon and pastured eggs as well. These ingredients made a delicious new meal.
2 medium size organic Zucchinis
3 organic eggs from pastured hens
6 rations of organic free range bacon
1/4 cup organic coconut flour (you could also use almond or buckwheat flour)
1/2 tsp himalayan salt
1/2 cup organic grass-fed parmesen cheese
organic grass-fed sour cream (raw if possible) to serve
1) Cook the bacon until crispy, do not discard the left over fat
12 Grate the cheese and zucchini, a food processor is quick and easy
3) Add the eggs, flour and salt and mix well
4) Pan fry the fritters in the bacon fat until crispy on both sides. Make 2 large fritters or 4 smaller ones
Serve with sour cream on top. This is also nice with avocado and a poached egg!
