I made this for Jasper’s first birthday party. I would say it was his favourite dish that I served on the day, even more so than his birthday cake, which was also much loved mind you. This makes the perfect side dish to any meal. it’s lovely served with my homemade hummus and apricot sauce.  This has a mixture of all kinds of vegetables but feel free to use any kind, I like to use what is in season.

6 organic eggs from pastured hens

1 large organic carrot

1 cup organic broccoli

1 large organic onion

4 cloves organic garlic

2 medium size organic zucchinis

1/2 cup organic extra virgin olive oil

1 cup organic cheese, I use a sharp cheddar

1 /12 cups organic sweet potato, baked and mashed

1 cup organic buckwheat flour. It’s best to use sprouted so that the phytic acid is removed.

1/2 tbsp dried thyme

1 tsp baking soda

1 tsp baking powder


1) Preheat oven to 180°C (350F). Grease a baking dish with butter, olive oil or coconut oil

2) Using a food processor, grate all of the vegetables (apart from the sweet potato)

3) Stir in the eggs, flour, sweet potato and oil and mix well

4) Pour into baking dish and bake for about 50 minutes
