The sweetness from sweet potatoes goes lovely with a tangy goat cheese. Enjoy this salad served warm or cold and add a protein of choice if you have a big appetite.

Sweet Potato Salad

Ingredients, makes 4 servings 

2 large organic sweet potatoes

4 cups organic spinach

2 cups organic green beans, or whatever is in season

200g organic goat feta

2 tbsp organic extra virgin coconut oil

3 tbsp organic toasted sesame seeds

Pink himalayan salt to season



1) Chop the sweet potatoes into cubes, put them into a bag, add the oil and salt and shake until coated. Bake at 180°C (350F) for about 30 minutes
2) Once the potatoes are cooked, put them into a bowl and add the spinach straight away. Crumble the feta, add the beans and mix all the ingredients together
3) Drizzle with some extra virgin olive, macadamia or walnut oil and sprinkle the sesame seeds on top. Add a protein source if you wish
