Super Cookies

I call these my super cookies because they are not only packed with goodness but they are also ‘super’ easy to make. The only sweetness comes from the dried berries making them the perfect nutrient rich snack.
 Super Cookies

Ingredients, makes 18 cookies

1/2 cup organic almond flour
1/2 cup organic coconut flour
1/4 cup organic ground chia seeds
1/4 cup organic desiccated coconut
1/4 cup organic toasted coconut chips
1/2 tbsp organic ground cinnamon
1/2 tsp unrefined salt, I use pink himalayan
1 organic egg from pastured hen, whisked
1/2 cup organic dried goji berries
1/2 cup organic dried mulberries
1/4 cup organic milk of choice
5 tbsp organic extra virgin coconut oil, melted
Method
1) Preheat the oven to 176 (350F) and line 1-2 cookie trays with baking paper
2) Put all of the dry ingredients into a medium size mixing bowl. Add the coconut oil, milk and whisked egg and stir until well combined
3) Scoop the mixture about one tablespoon in size and roll into a ball. Place onto the cookie tray and press down gently with fingertips. Repeat this to make around 18 cookies
4) bake for 15 minutes or until slightly golden on the edges. Let cool before serving.
