Spiced Roasted Pumpkin

This is a quick and easy dish bursting with flavour. Enjoy it as a side dish or add a protein of choice to enjoy as a salad.

Spiced Roasted Pumpkin

Ingredients 

500g organic pumpkin, I use Kent pumpkin

1 small organic onion

1 large organic zucchini

2-3 tbsp organic extra virgin coconut oil

1 tsp organic ground cinnamon

1/2 tsp organic ground nutmeg

1 tsp fresh organic ginger

1 tsp unrefined sea salt or pink himalayan salt

1 garlic clove, crushed

Method

1) Preheat the oven to 180 °C (350F). Chop the pumpkin and zucchini to about 2 cm squares. Finely slice the onion.
2) Using a baking dish, out the chopped vegetables into the dish. Sprinkle the cinnamon and nutmeg over the top. Throw in the ginger, garlic and coconut oil and mic together with your hands.
3) Bake uncovered for 45-55 minutes or until slightly brown
