SOFT CENTERED CHOCOLATE PUDDING

This would have to be my easiest dessert recipe. Just two ingredients (plus cream to serve) and 7 minutes in the oven and it’s ready! You will have many fans after serving this dish.

Ingredients , makes 4 servings

4 organic eggs from pastured hens

200g organic dark chocolate, at lease 75%, I like using Vivani 85%

Organic grass-fed cream, preferably raw to serveSoft Centred Chocolate Pudding

Method

1) Preheat the oven to 176 °C (350 F) and grease (using butter or coconut oil) 4 ramekins, about 3/4 cup in size

2) In a small bowl whisk the eggs until frothy

3) Using a double boiler- bring a small pot to a simmer, melt the chocolate in a bowl on top of the simmering water

4) Once the chocolate has melted remove from the heat. Whisk a small amount of the egg mixture (about 1/4 of a cup at a time) into the melted chocolate. The mixture may get quite thick half way through, keep whisking and adding the egg, it will smooth out by the time the egg mixture is combined

5) Pour into ramekins, place them on a baking dish. Bake for 7-8 minutes. Do not overcook, this is best served undercooked so that the middle is oozing with chocolate. I sometimes only cook it for 6 minutes so that it’s just slightly cooked on the outside

Serve in the ramekins with fresh whipped cream and berries, if they are in season
