ROASTED PUMPKIN, FETA & ZUCCHINI SALAD

Pumpkin and goat feta go so well together. This makes a lovely light salad.

Ingredients

1 whole organic kent pumpkin (squash)

2 organic zucchinis

1 tbsp organic extra virgin coconut oil or avocado oil

1 tbsp organic cumin seeds

5 cups organic spinach

2 cups organic green beans

1/2 cup organic sesame seeds

200g organic goat feta

Method

1) Preheat the oven to 180 degrees°C (356F) and take pit two baking trays

2) Cut the pumpkin into 2cm cubes, place in a plastic bag, add  the oil and cumin seeds and shake until covered, place onto the baking tray and bake for about 35 minutes or until soft

3) Slice the zucchinis and place onto a separate tray, bake for about 20 minutes or until soft

4) Lightly toast the sesame seeds on the stove top at low heat

5) Wash the spinach and beans and chop the beans in half

6) Chop or crumble the feta

7) Mix all of the ingredients together lightly in a large bowl with your hands and sprinkle the sesame seed on top
