This is just so delicious, you will not believe that it is heathy! With only 3 grams of sugar and IMG_2264packed with great fats, it really is a healthy dessert.

Ingredients, makes 6 servings 

100g organic 85% dark chocolate, I use ‘Viviani’ it’s really smooth and creamy and only uses three ingredients.

400 mls organic grass-fed full fat cream, preferably raw

3 organic egg yolks from pastured hens, lightly whisked

pinch of pink himalayan or unrefined sea salt

3/4 cup oragnic raspberries, or whatever berry is in season. You can use frozen


1) Using a double boiler, bring water to a simmer. Once simmering warm 350 mls of the cream for 3-4 minutes. It shouldn’t get too hot, just enough to cook the egg yolks. This is great if you are using raw cream because it won’t get destroyed by the heat

2) Add a tbs or two to the egg yolks to temper and then add the yolks to the cream along with a pinch of salt, stir for 2-3 minutes (make sure you water isn’t boiling)

3) Add the chopped chocolate and stir until a smooth consistency. The chocolate will separate a little at first but don’t panic, just keep stirring until it’s well combined, it will become a thick rich mousse

4) Pour into 6 mousse glasses or use wine glasses if you don’t have any

5) Put in fridge for at least 2 hours to set. You can also serve this warm as a sauce

6) Whip the remaining cream with 1/2 cup of the raspberries

7) Once the mousse has set, divide the cream and remaining berries between the 6 servings
