PISTACHIO CHOCOLATE CHIP COOKIES

1 organic egg from pastured hen

120g organic grass-fed butter, melted

1/4 cup organic raw honey, B grade maple syrup or brown rice syrup for a fructose free version. I don’t make my baked goodies very sweet as my family doesn’t have much of the sweet stuff. If you want them sweeter, try using 1/3 or 1/2 cup sweetner, but remember, sugar is best consumed in small amounts!

1/4 cup organic pistachios, crushed almost into a powder with some chunks

1/4-1/2 cup organic 85% chocolate, I use Vivani 85% and crush it myself, I’d rather use this than chocolate chips as it is my favourite chocolate

1/2 tsp organic vanilla extract/paste

1/2 tsp himalayan salt

1/2 tsp baking soda

1 1/4 cups organic almond flour

Method

1) Preheat the oven to 180°C (350F) and line a cookie tray

2) In a medium size bowl, mix together flour, baking soda, salt, pistachios and chocolate

3) In a separate bowl, whisk egg and then add vanilla and maple syrup

4) Pour wet ingredients into dry and mix until combined

5) Spoon onto cookie tray, the size of a tablespoon. Bake for around 8 minutes or until just golden
