PEACH COBBLER

Fruit desserts are a delight because, when used in season, the fruit gives the dish it’s sweetness meaning there is need for just a little extra sweetener, if any at all. I love to enjoy this dessert with some organic full fat grass-fed cream (raw when I can get it). Sometimes I will make it without the sweetener and serve it with my homemade ice-cream. Peach Cobbler

Ingredients 

2 cups organic blanched almond meal. I make my own almond flour out of activated almonds- simply blend in a food processor

2 cups organic unsweetened desiccated coconut

2 cups organic oats

250g organic grass-fed butter, cold

1 tbsp organic ground cinnamon

1 tsp organic ground nutmeg

1/2 tsp unrefined sea salt or himalayan salt

1 tsp organic vanilla bean powder

1/3 cup organic raw honey, B grade maple syrup or brown rice syrup

9 organic peaches. If you are like me and like to eat with the seasons you can swap the peaches for whatever fruit is in season

Method

1) Preheat the oven to 180°C (350F) and grease a large baking dish using butter or coconut oil

2) Slice (and peel if you prefer) the peaches and layer them into the baking dish, sprinkle with a small amount of ground cloves for some extra spice

3) Put all of the dry ingredients into a large mixing bowl and stir until well combined

4) Slice the butter into chunks. Using your fingers, rub the butter into the dry mixture until it’s all combined together. Drizzle the brown rice syrup over the mixture and mix together (you may want to use a spoon here otherwise your fingers will become very sticky)

5) Crumble the mixture on top of the peaches and bak in the over for about 20-25 minutes

You can make this in advance, keep it in the fridge and then bake it right before serving.
