Nut Butter Choc Chip Cookies (Paleo)
Using two different nut butters in these cookies makes them light and chewy. With just a small amount of sweetness these make a pretty healthy treat!
1/2 cup organic almond butter
1/2 cup organic sunflower butter. Alternatively you can make your own nut butters by processing 2 cups of almonds and sunflower seeds, separately in a food processor
2 tsp organic cinnamon
1 organic egg from pastured hen, whisked
1/2 tsp organic baking soda
1/2 tsp organic baking powder
1/4 tsp unrefined sea salt
1/8-1/4 cup organic maple syrup, depending on your preference of sweetness
50g organic dark chocolate (over 75%, the darker the chocolate the less sugar), broken into choco chip size pieces
1) Preheat oven to 176 °C (350F). Put all ingredients, except the chocolate, into a food processor and blend until well combined
2) Fold in the chocolate. Line a cooked tray with baking paper. Using a tablespoon, scoop out the cookie dough, and place on the tray, this will make 12-14 cookies. Bake for about 15 minutes or until slightly golden brown.
