A quick and easy no bake snack!

Try to use organic ingredients as much as possible

2 cups organic almond, try to use activated (250g)

1/4 cup organic shredded coconut (15g)

1/8- 1/4 cup organic raw honey, B grade maple syrup or for a fructose free version use brown rice syrup. Omit the sweetener for an even healthier slice

1/2 cup organic natural crunchy peanut butter, or another nut butter of choice (125g)

2 tbs organic expeller pressed virgin or extra virgin coconut oil (30g)

1/2 tsp unrefined sea salt, I use pink himalayan salt

1) Place almonds and coconut into a blender and coarsely blend, put into a bowl

2) Place the coconut oil, salt and peanut butter into a small saucepan and melt over low heat until combined

3) Turn the heat off and stir in the honey, this will prevent it from destroying the nutrients

4) Add peanut mixture to dry ingredients and mix until well combined, I find using my hands is best

5) Pour mixture into a lined container and press down firm with your hands to make it compact

6) Put into the freezer for 2-3 hours before slicing

7) Store in the fridge for up to one week or freeze for later use
