TOMATO SAUCY MEATBALLS

I think that meatballs are loved by all, this is a really easy dish that takes no time at all to prepare. Make a double batch and freeze it for times when you don’t feel like cooking.Tomatoe Saucy MeatballsSAUCY

Ingredients makes about 8 servings

500g organic grass-fed beef mince
250g organic pastured pork mince
1 finger organic eggplant (chopped)
1 medium organic carrot (grated)
1 small organic zucchini (grated)
1 organic egg from pastured hen
1 clove organic garlic
1 tbsp organic dried basil
1 tbsp organic dried coriander
¼ cup organic coconut flour
250g organic tomato paste- low sodium, the only ingredients should be tomatoes
1 cup organic tomatoes, chopped. Alternatively you can use tin diced tomatoes- again the only ingredients should be tomatoes
2 tbsp organic extra virgin coconut oil

Method
1) Combine all ingredients, except for tomato paste and diced tomatoes
2) Using a tablespoon, scoop into balls and place on the oiled pan (you may have to do two batches at a time or use two pans, depending on the size)
3) Pan fry balls until brown on both sides
4) Once all the balls are pan fried, add tomato paste and sauce and simmer covered for 25-30 minutes
