LITTLE CHOCOLATE PUDDINGS
Ingredients, makes 6-8 muffins
1/2 cup organic coconut cream
3 organic eggs, from pastured hens, whisked
1/4 cup organic virgin coconut oil, melted
1/2 cup organic cacao powder
1 tsp baking soda
1/4 cup organic raw honey, B grade maple syrup or for a fructose free version use brown rice syrup. I often make these with no sweetener making them a super healthy snack!
1 tsp organic vanilla extract (one without sugar)
1/2 tsp Himalayan salt
1) Pre-heat oven to 180 °C (350F) using coconut oil, grease muffin tray (12) or place muffin liners
2) Simply combine all ingredients together, whisk until smooth
3) Pour into muffin tray, the mixture will be quite runny, bake for about 15-20 minutes. These may dip slightly once removed from the oven which is normal
4) Serve warm with some fresh organic cream (raw if possible) and even some strawberries. I also like them with yoghurt.
