A HEALTHIER VERSION OF THE ANZAC BISCUIT

These golden chewy biscuits are a favourite of many, a lovely treat!


Anzac biscuits

Ingredients, makes 24
1 cup organic sprouted spelt flour

1 cup organic rolled oats (soaked overnight is better. This will reduce the phytic acid making it more mineral dense for more information on this see here)

1 cup organic desiccated coconut

¼ cup of either coconut nectar, honey or brown rice syrup

125 g organic grass fed butter

1 tsp bicarbonate soda

2 tbs water

 

Method

1) Preheat oven to 160ºC (325F) and line two baking trays with baking paper

2) Put butter, maple syrup, coconut nectar and water in a saucepan and stir until combined

3) Put dry ingredients into a bowl and stir in butter mixture. Mix until combined

4) Roll 1 tbs of dough into a ball and place about 5 cm apart. Press each biscuit down with a fork to flatten slightly

5) Bake for about 10 minutes or until golden
