GOURMET GRILLED CHEESE SANDWICH (PALEO)

This is a step up from the typical grilled cheese sandwich, or ‘toasted sanga’ as us Aussies call it! The sweetness of the caramelised onions tie in well with the sharp cheddar cheese and the tomatoes give it the perfect amount of tang.IMG_1346

Ingredients 

Use organic ingredients as much as possible, especially with animal produce.

Makes 2 sandwiches

4 slices of my ‘Zucchini Paleo Bread’

1 organic medium onion, thinly sliced, you can also use shallots

1 cup organic kale or spinach

1/2 cup sliced organic tomatoes, one on the vine are best as they stay fresh and build great flavour

About 4 slices of organic vintage cheddar, try to get raw, grass-fed

Himalayan salt

1 tbsp organic virgin coconut oil

2-3 tbsp organic grass-fed butter

Method

1) Heat the coconut oil in a medium-sized pan on medium heat, add onions

2) Meanwhile, butter one side of the 4 slices of bread

3) The onions will be done when they turn golden in colour. Once ready, place one piece of bread (butter side down) onto the pan, add the onions followed by the cheese and then tomatoes, salt and then pop on the other piece of bread (butter side out)

4) Grill until the butter has turned crispy and golden in colour, both sides. You will know when it’s ready because the cheese will have melted and be nice and gooey!

This is lovely served with 1/2 cup of sauerkraut or pickles
