French toast is a really simple dish. It’s quick to prepare making it perfect to enjoy anytime of the week.

Ingredients, makes 2 servings

2 organic eggs from pastured hens

4 pieces of organic bread. Use an ancient grain sourdough or my paleo bread for a gluten free option

1/3 cup organic full fat milk or cream (preferably raw)

3/4 cup organic full fat natural yoghurt

2 tbsp organic ground cinnamon

1 cup organic berries, or whatever fruit is in season

1 tbsp organic extra virgin coconut oil

1) Heat a pan to medium heat, add the oil

2) Whisk together the eggs, milk/cream and cinnamon

3) Dip the bread into the egg mixture, flipping it over to soak as much of the mixture as possible

4) Place the bread onto pan and cook until golden on both sides

5) Serve with yoghurt and berries on top

      I recommend that instead of dieting, consider a lifestyle change. That is what I offer my clients, they eat traditional whole foods with no food group restrictions and the results they are after are achieved and last. The food I recommend is food that you continue to eat for the rest of you life. It’s a really simple and enjoyable way of living and getting the results you’re after!

    Can I use a slice of pumpernickel bread?

      Hi Nat,

      If the pumpernickel bread has been through the fermentation process like sourdough (some of them have but you will need to find out with the supplier) then yes. However, I’m not sure how well it will go with soaking up the egg mixture. The fermentation process gets rid of the phytic acid making the minerals able to be absorbed by the body.
