DATE AND WALNUT MUFFINS

These muffins are the perfect treat to impress your guests!

Date and Walnut Muffins

Ingredients, makes 12

1 cup organic dates
1 cup water
2 organic eggs from pastured hens
60g organic butter or coconut oil
1 tsp organic vanilla paste or vanilla powder
1 tsp baking soda
½ tsp baking powder
1 cup sprouted organic spelt flour, you could use buckwheat flour as a gluten free option
½ cup organic sprouted walnuts
¼ cup organic grass-fed natural yoghurt

 

Method

1) Preheat oven to 175 ºC and grease muffin tray

2) Chop dates, bring to the boil with the water and boil until smooth. Put in the fridge to cool a little

3) Whisk the eggs and vanilla and add to the flour mixture in a medium size bowl

5) Stir in the date mixture and then the walnuts

6) Spoon into muffin tray and bake for 25-30 minutes

To turn into a dessert, make a sauce by heating another batch of the dates and butter and serve warm with the sauce and even some cream or yoghurt on top.
