This is another recipe of my Mums. I was lucky to grow up with such and amazing Mother who created delicious nutritious meals, as well as luscious desserts like this for those special occasions.

Mums Dark Chocolate Orange Cake
Cake Ingredients
125g organic grass-fed butter

1 1/4 cups water

1 1/2 cups organic coconut sugar

2 heaped tbsp organic raw cocoa powder

2 organic eggs from pastured hens

1 1/2 cups organic sprouted spelt flour

3 tsp baking powder

Cake Method

1) In a large saucepan over medium heat bring to a boil

2) when boiling add 1 tsp bi-carb soda (being careful it does not boil over). Stir for about 2 minutes and then set aside to cool

3) Once cool add the eggs, flour and baking powder and mix well. The mixture should be the consistency of a thick pancake batter

Bake at 180°C (350F) for approximately 35-45 minutes in a 30cm greased cake tin

Icing Ingredients

1/2 cup organic grass-fed cream

250g organic 75%+ dark chocolate

2 tbsp fresh organic orange juice (optional)

Icing Method

1) Put the cream into a medium size saucepan and scald (just let bubble around edges).

2) Add the chocolate and fresh orange juice

3) Stir until smooth, then rest for about 15 minutes before icing cooled cake
