1 large carrot, chopped

1 large zucchini, finely chopped

1 large onion, chopped

2 cups mushrooms, chopped

1 small red pepper (capsicum), chopped

1-2 cups green beans or snow peas

250g grass-fed beef mince

1 tbs extra virgin olive oil or coconut oil

1 tsp minced garlic (be sure that the only ingredient is garlic) or 1 garlic clove

100g full fat natural yoghurt


1) Heat a deep pan to medium heat and add oil, once hot, add the meat and cook until browned. Remove meat from pan leaving the juices in

2) Add the onion and cook until slightly brown and then do the same with the mushrooms, then add the garlic

3) Add the rest of the vegetables, don’t cook them for too long so that they keep their nutrients, about 8 minutes should be enough

4) Return the meat to the pan for another few minutes

5) Turn off the heat, stir through the yoghurt and serve
