CHOCOLATE NUT BUTTER CUPS
These nut butter cups make the perfect sweet treat. Chose which ever nut butter you prefer, I am a big fan of peanut butter but let your taste buds decide.
1 cup organic extra virgin coconut oil
3/4 cup organic raw cacao powder
1-3 tablespoons of organic raw honey, B grade maple syrup or brown rice syrup, depending on your liking
1/2 teaspoon pink himalayan salt, plus extra to sprinkle on top
1/4 cup organic nut butter of your choice
40 mini liners
1) On low heat using a small saucepan, melt the coconut oil and brown rice syrup until runny. Place the chocolate liners on a baking tray whilst the oil and syrup are melting.
2) Once melted take off the heat and stir in the cacao powder and salt. Spoon the chocolate into the liners, leaving a little space for the nut butter.
3) Spoon about 1/4 of a teaspoon of your choice of nut butter into each liner. You may need to push some of the chocolate around to cover the nut butter. Sprinkle with a touch of salt on top.
4) Place the chocolates into the fridge for at least 30 minutes, or the freezer for 10 minutes if you are in a rush to try them! These taste best served cold, right out of the fridge as the coconut oil can melt in warmer temperatures.
