I made these for Jasper’s first birthday party. The muffin is sweetened with just the bananas and I have used just a small amount of honey in the frosting. This was Jasper’s first taste of a sweetener and as you can tell in the photo below, he quite liked his chocolate buttery treat!


Ingredients, makes 18 muffinsChocolate Frosted Banana Muffins

6 organic over ripe bananas

2 cups organic buckwheat flour, try to find sprouted flour so that the phytic acid is removed

4 organic eggs from pastured hens

70g organic grass-fed butter

4 tsp organic ground cinnamon

1 tsp organic ground nutmeg

1 tsp organic vanilla, I use the powder

1 tsp baking soda

1 tsp baking powder

1/2 tsp himalayan salt


1) Preheat the oven to 180°C (350F). Using a food processor, blend the bananas until smooth

2) Add the remaining ingredients and process until mixed well

3) Spoon the batter into the muffin tin using muffin liners, bake for about 12-14 minutes

Chocolate Butter Cream Frosting 


60g organic cacao powder

120g organic grass-fed butter

80g organic raw honey


1) Whisk all ingredients together until light and fluffy, about 1-2minutes

2) When the muffins have cooled, spread the icing onto each muffin using a spatula or butter knife

These can be ready to serve straight after they have been iced, if it is a warm day I put mine in the fridge until right before serving, otherwise the butter will melt.
