Chocolate Fig Brownie

If you are after a gooey chocolatey treat then this is for you. The fig makes this brownie lovely and moist and the bitter sweet chocolate pairs so nicely. This is a very decadent treat and served warm with cream makes a mouth watering dessert.
Chocolate Fig Brownie

180g Organic dark chocolate. I use 100g of 90% and 80g of 85%. Use higher than 75% cacao as this will contain less sugar and the bitterness of the dark chocolate goes so nicely with fig. Always choose fair trade as much as you can

150g organic grass-fed butter

2 eggs from organic pasture raised hens, whisked

270g fresh organic figs, roughly chopped

1/4 cup organic cacao powder

1 cup organic macadamia nuts

1/4 tsp unrefined sea salt or himalayan salt

2 tsp organic coconut sugar

1) Preheat the oven to 180°C. In a food processor, process the nuts into a flour

2) Using a double boiler on the stove top, melt the butter and chocolate on a low heat, carful not to burn. Once melted set aside off the pot so that it can cool slightly, enough that it won’t cook the eggs

3) Put al of the ingredients into the food processor with the nuts and process until smooth

4) Bake for 25-30 minutes. The middle will still be slightly soft and will set a little more when it’s cooling

5) This is lovely served with whipped cream or coconut cream. Or try my ice cream
