CHOCOLATE COCONUT BALLS

I love the combination of chocolate and coconut. This recipe is a favourite of mine for two reasons. 1) it’s super quick and easy to prepare 2) use a sweetener and it’s a dessert or leave it out and it’s a snack!
The Noble Nutritionist- Chocolate Coconut Balls

INGREDIENTS

1 1/2 cups organic blanched almond flour

1 1/2 cups organic desiccated coconut

1/2 cup organic raw cacao powder

1/2 teaspoon unrefined sea salt, I use pink himalayan salt

1-2 tablespoons organic raw honey, coconut nectar, B grade maple syrup or brown rice syrup for a fructose free version. Omit the sweetener for a healthy snack

100 mls expeller pressed organic virgin/extra virgin coconut oil

 

METHOD

1) Melt the coconut oil so that it become liquid, if it’s not already

2) Put all dry ingredients into a bowl and combine

3) Add the coconut oil and honey and mix until well combined

4) Roll mixture into 24 balls coating the outside in desiccated coconut. Place into a container

5) Refrigerate, they will take about 3 hours to set. Keep them in the fridge
