Chicken Liver Paté

Paté is made from the livers of chicken, pork, duck or lamb, and is extremely nutrient rich. Liver is the most concentrated source of vitamin A of any food, it is high in vitamin D and provides a great source of B12.

Ingredients Chicken Paté

400g organic livers from pasture raised chickens

300g organic grass-fed butter

3 organic shallots, sliced finely

2 cloves organic garlic, finely chopped

1 cup red wine, organic if possible

1 tsp organic ground turmeric

Method

1) Heat a pan on medium heat wit 1 tablespoon of butter, add the sliced onions and garlic. Fry until the onion is pale in colour. Spoon the onions and garlic into a blender, ready to blend later with the rest of the ingredients.

2) Turn the pan up to high heat, once hot, add the livers and fry until lightly browned on all sides. Add wine, let simmer for one minute.

3) Add the liver mix to the blender, along with the butter and turmeric and blend until smooth

Serve on your bread of choice- sourdough, sprouted or paleo bread are a better choice. Chopped vegetables such as carrots, celery or peppers are also nice.

Store in the fridge for up to 5 days, or freeze.
