Halloumi cheese has a subtle flavour and squeaky texture. It goes lovely with the fresh vegetables in this salad, the brown rice makes the dish a little more hearty.

Ingredients, makes 4 servings 

100g organic halloumi cheese, sliced

1 cup organic brown rice, measure uncooked (1 cup of uncooked rice makes 3 cups of cooked rice). This will need to be prepared earlier. Soak the rice for at least 7 hours before cooking, to get rid of the phytic acid which allows for proper absorption of minerals. Once soaked boil rice until cooked

2 tbsp organic extra virgin coconut oil, olive oil or avocado oil

2 large organic tomatoes

1 organic capsicum

4 cups organic spinach

1 organic cucumber

Juice from 1 organic lemon

Unrefined salt and pepper to taste

Fresh organic cilantro, chopped


1) Heat a small pan to medium heat

2) Once warm, add the oil and the sliced cheese

3) Meanwhile, chop up the vegetables, put them into a bowl with the cooked rice and mix together

4) Keep an eye on the cheese and turn to other side after a few minutes, it should be golden brown

5) Once the cheese has cooked, place it on top of the salad and squeeze some lemon juice on top. Garnish with as much cilantro as you please
