Broth is a super food. It is rich in iron, calcium, phosphorus, magnesium and other trace minerals. Including it as much as possible is a great way to boost the immune system. Great to use in soups and curries or any recipe calling for stock.Chicken Broth


1 organic pastured chicken carcass, cooked (roasted chickens are great.


Lemon or apple cider vinegar.

1) Strip the meat and skin from the bones (use this for other meals) and place in a slow cooker (breaking the bones will help to release extra minerals).
2) Fill with water so the bones are just covered, add a tablespoon of apple cider vinegar or the juice from one lemon, this helps to drain all the important minerals from the bones.
3) Turn the slow cooker on, I usually put on high for a few hours and then turn to low for the remainder of the time, cook for 24 hours.
Use immediately or freeze in 2 cups batches for later use. This is great for soups, sauces and casseroles.
