2 large beetroot (about 1,000 grams measure raw)

4 cups green beans

2 large pastured (organic if possible) chicken breasts (about 600g) or buy a roast chicken

200g quark cheese (or full fat feta/goats cheese)


1) Wrap the beets in foil and bake at 180 degrees Celsius for about 1 hour or until you can push a fork all the way through

2) Once cooked, cool and then dice

3) Cook chicken or pull apart roast chicken (if you have purchased one)

4) Divide all ingredients into 4 servings

This is great to keep in the fridge for a few days easy lunch/dinner
