BEEF & VEGETABLE LETTUCE CUPS

Ingredients 

500g grass fed beef mince (lean but not extra lean and preferably organic)

1 clove of garlic

1 cup diced mushrooms

2 cups of chopped vegetables of your choice

1 onion, chopped

1 tsp extra virgin olive oil

1 tsp unrefined sea salt

1 tsp dried coriander

4 tbs of balsamic or raspberry vinegar

1 small head of lettuce

Method 

1) Heat pan to medium heat and add onion, mushrooms and garlic. Cook until soft

2) Add beef mince

3) Once beef has browned, add the vegetables, vinegar, salt and coriander. Turn down to low heat and leave for about 8-10 minutes

4) Serve in the lettuce cups
