I love it when it’s blueberry season. We enjoy them in many different way but the blueberry muffin is a favourite. These are only sweetened with fruit making them a healthy snack as well as a treat. 
Banana Blueberry Muffins


6 eggs from organic pastured hens

1/2 cup orgganic coconut flour

1/3 cup organic unrefined coconut oil, melted

1 organic banana

3/4 cup organic blueberries (fresh or frozen)

1 tbsp organic ground cinnamon

1/2 tsp organic baking soda

pinch unrefined sea salt


1) Preheat the oven to 176 degrees Celsius

2) Lightly whisk eggs, then add the cooled coconut oil

3) Stir in the coconut flour, cinnamon, salt and baking soda and mix well until all lumps are gone

4) Mash the banana in a separate bowl, once smooth stir into the mixture, finally stir in the blueberries

5) Pour into greased tin. You can use a bread tray or single muffin trays (12)

6) Bake for about half an hour or until slightly brown on top and able to remoce a clean fork from the centre. If you’re using a tray, you will need an additional 10-15 minutes.
