Apple Spiced Pâté

Pâté is a french delicacy but it is really easy to make yourself. It’s also super cheap, you can pick up some livers for less than 5 bucks. My toddler Jasper loves pâté and will happily eat it everyday. I love that he enjoys is because it is packed with nutrients such as healthy fats, vitamins A, D, E, K, iron and folic acid.

This pâté I have made slightly sweet by using grated apple and cinnamon.

Ingredients

500g chicken livers from organic pastured chooks

1 organic apple, peeled and grated

22og organic grass-fed butter

2 tsp organic ground cinnamon

1/4 tsp organic ground nutmeg

1 tsp pink himalayan salt or unrefined sea salt

4 tbsp organic bone broth

1 tbsp organic apple cider vinegar

Method

1) Using a large pan at medium heat, add the apple and one tablespoon of butter. Cook for abut 8 minutes

2) Add the spices and salt followed by the livers. Brown on both sides for 7 minutes in total. You want the lovers to still be pink on the inside

3) Add the broth and vinegar and cook for about 3 minutes or until most of the liquid is absorbed

4) Transfer to a food processor and blend until sooth adding one tablespoon of butter at a time

Store in BPA free containers in the fridge. I like to put mine into small containers and freeze as it only lasts for abut three days in the fridge

I once ran out of containers and had to store my pâté in icy pole holders. It actually works quite well as it is really easy to remove a small amount at a time.
